Mama'S Mustard Chicken - cooking recipe

Ingredients
    1 fryer chicken, quartered
    salt
    3 Tbsp. lemon juice
    1 tsp. dried crushed tarragon
    1/4 c. butter
    1/4 c. prepared mustard
Preparation
    Sprinkle chicken with salt.
    Place skin side down in foil-lined shallow baking pan.
    In a small saucepan, heat the butter, mustard, lemon juice and tarragon until the butter melts; stir until smooth.
    Brush mustard sauce over chicken.
    Bake at 425\u00b0, basting chicken often with sauce, for 25 minutes.
    Turn chicken; brush with sauce and baste often.
    Bake 20 minutes longer.
    Heat remaining sauce and serve with chicken.
    Makes 4 servings.
