Pasta With Vegetables - cooking recipe

Ingredients
    2 c. broccoli flowerets
    1 large carrot
    1 zucchini
    8 oz. 3 color pasta curls
    1/4 lb. sliced mushrooms
    1/3 c. sliced green onions
    3 cloves garlic, minced
    1/4 tsp. dried thyme
    3 Tbsp. Parmesan cheese
    2 to 3 Tbsp. margarine
    1/2 to 3/4 c. sharp Cheddar, shredded
    2 Tbsp. oil (polyunsaturated)
Preparation
    Cut carrot and zucchini in julienne strips.
    Cook broccoli, carrots and zucchini in water for 4 minutes.
    Cook pasta according to package directions.
    In large skillet, heat oil and saute mushrooms, green onions, garlic and thyme until tender.
    Combine vegetables, pasta and onion mixture; mix well.
    Add margarine and Parmesan cheese.
    Mix and top with sharp Cheddar.
    Serves 6.
