Zucchini Squash Relish - cooking recipe

Ingredients
    20 c. grated zucchini squash
    9 c. chopped onions
    1 c. salt (not iodized)
    12 c. sugar
    5 c. vinegar
    12 bell pepper, chopped (red and green)
    4 tsp. cornstarch
    4 tsp. celery seed
    2 tsp. dry mustard
    2 tsp. turmeric
Preparation
    Mix squash, onions and salt in enamel dishpan.
    Let stand overnight.
    Rinse 2 to 3 times with clear water.
    Add sugar, vinegar, pepper, cornstarch, celery seed, mustard and turmeric to squash mixture.
    Bring to a rolling boil.
    Cook 12 to 15 minutes. Put mixture in jars and seal.
    Makes 15 pints.
    This is good on hot dogs and served with vegetables.
