Ingredients

1 (16 oz.) can sliced beets
1 medium sweet onion, peeled and sliced in thin rings
3/4 c. red wine vinegar
1 c. sugar
Preparation

Drain beets, reserving liquid.
Add water to reserved liquid to equal 1 1/2 cups.
Add sugar and vinegar.
Mix well.
Layer beets and onion rings in glass bowl.
Pour liquid over them. Refrigerate overnight.
