Crustless Vegetable Pie - cooking recipe
Ingredients

1 eggplant, cubed
2 zucchini squash, cubed
1 large onion, chopped
1/4 c. oil
4 tomatoes, peeled and chopped
3 eggs
3/4 c. Parmesan cheese
1 tsp. parsley
1/2 tsp. basil
1/2 tsp. oregano
salt and pepper to taste
1/4 c. Mozzarella cheese
Preparation

Saute first 4 ingredients 10 minutes.
Add tomatoes.
Cover; simmer 20 minutes.
Beat eggs, seasonings and 1/4 cup cheese.
Add vegetables.
Pour half of the mixture into greased 10-inch pie pan.
Top with 1/4 cup cheese.
Layer remaining mixture and cheese on top.
Top with Mozzarella cheese.
Bake at 350\u00b0 for 40 to 45 minutes or until set.
Serves 5 to 6.
