Real Italian Gravy (Pasta Sauce) - cooking recipe

Ingredients
    1 onion
    1 green bell pepper
    garlic to taste
    4 Tbsp. olive oil
    1 small can mushrooms
    1 can crushed tomatoes
    1 can tomato puree
    1 small can tomato paste
    3/4 c. water (more if thinner, less if thicker)
    salt
    black pepper
    basil
    2 bay leaves
    oregano
Preparation
    Saute chopped onion, pepper, garlic and mushrooms in oil in large saucepan until onions are clear. Remove from heat.
    Add crushed tomatoes, puree and paste. Place on medium heat and stir well. Add water to desired thickness. Bring to simmer. Season with rest of ingredients. Cover and \"percolate\" slowly for 2 hours.
