Harvest Vegetable Sauce - cooking recipe

8 oz. pasta
2 carrots, sliced
1 small head cauliflower (1 lb.), cut into pieces
1 green or red pepper, cut into bite size pieces
1 large onion, cut in half and sliced 1/4-inch thick
2 garlic cloves, minced
3 Tbsp. olive or salad oil
3/4 tsp. salt
1/2 tsp. cracked black pepper
1/2 lb. medium mushrooms
1/4 c. red wine vinegar or lemon juice
Preparation

Prepare pasta conventionally as package directs.
Drain and keep warm.
Meanwhile, in a 2 1/2-quart casserole, cook carrots and next 7 ingredients, covered, on High in microwave until almost tender.
Stir twice during cooking.
Add mushrooms; cook, covered, 4 to 6 minutes, until tender, stirring once during cooking.
Toss mixture with pasta and vinegar or lemon juice.
If you like, sprinkle with chopped, fresh basil or parsley.
Makes 4 servings.
