Potato Skins - cooking recipe
Ingredients

baking potatoes
bacon bits
green onions (optional)
Cheddar cheese, shredded
sour cream
Preparation

Bake several potatoes in oven or microwave until soft when pressed.
Let cool about 30 minutes.
Slice in half lengthwise. Scoop out center of potato, leaving about 1/2-inch or less potato on skin.
Drop skins in deep fat fryer and fry until crisp or bake in oven until crisp.
Place on broiler rack in oven, topped with shredded cheese and bacon bits.
(Fresh cooked bacon is much better.)
Broil until cheese melts.
Remove and top with more bacon bits and sour cream or your choice of toppings (green onions, chopped).
If you don't want your skins crisp, use the oven method instead of deep frying; also cuts down on calories.
