Spanish Chicken And Rice - cooking recipe
Ingredients

1 1/2 lb. boned chicken, in pieces
2 cloves garlic, minced
1/2 c. chopped celery
1 large onion, chopped
1/2 c. olive oil
salt and pepper to taste
2 Tbsp. fresh parsley
1 (16 oz.) can tomatoes and liquid
1 c. chicken broth
1 c. frozen peas
1 1/4 c. long grain wild rice
1/4 tsp. powdered saffron
Preparation

Brown chicken in olive oil in a Dutch oven.
Remove.
Saute celery and onion.
When nearly soft, add garlic, parsley and tomatoes.
Simmer 20 minutes.
Add rice, peas, broth, saffron and chicken.
Stir well.
Boil, cover, lower heat and simmer gently for about 25 minutes until all liquid is absorbed.
