Duckling - cooking recipe

Ingredients
    1 (5 lb.) duckling
    1 1/2 tsp. salt
    2 tsp. fat
    1 1/4 c. orange juice
    1/2 tsp. hot sauce
    1/2 tsp. allspice
    2 oranges, sliced 1/4-inch thick
Preparation
    Split duck down
    back.\tSprinkle
    with 1 teaspoon salt. Heat fat in
    large
    skillet,
    add duck.\tCook until browned at 300\u00b0. Mix orange\tjuice,\thot
    sauce,
    allspice and remaining salt, pour over
    duck.
    Cook
    covered\tover
    low heat, turning duck several times
    for\tabout 45 minutes.
    Add oranges.
    Cook 15 minutes longer or until duck is tender.
