Low-Fat Chicken, Vegetables And Rice - cooking recipe

Ingredients
    boneless chicken, cut in chunks
    15 oz. chicken broth
    2 tsp. oil
    1 tsp. garlic
    1 can sliced mushrooms, drained
    8 to 16 oz. pkg. frozen vegetables
    salt and pepper to taste
    1 1/2 c. Minute rice
Preparation
    Boil chicken and broth for 15 to 20 minutes, drain and keep liquid.
    Cook oil, garlic and mushrooms in large skillet and add chicken.
    Cook about 2 minutes.
    Add broth, frozen vegetables and salt and pepper to mixture.
    Bring to a boil.
    Add rice and let simmer for 5 minutes.
