Southern Green Beans - cooking recipe

2 qt. green beans
3-inch sq. fatback
1 tsp. salt
Preparation

Choose tomatoes that are just beginning to change color. Slice tomatoes and dip in a mixture of flour, salt and pepper. Let set a few minutes and re-dip if needed.
Fry in butter over medium-low heat until golden. Turn carefully and brown the other side.
Serve hot.
