Sweet Potato Puffs - cooking recipe
Ingredients

1 1/4 lb. sweet potatoes, peeled
6 Tbsp. soy milk
salt and pepper, to taste
2 (10 oz.) pkg. frozen puff pastry shells
Preparation

Bake the sweet potatoes for 30 minutes, then puree with the soy milk and salt and pepper.
Meanwhile, bake the pastry shells according to package directions.
Take pastry shells from the oven, remove the tops, and fill with the warm sweet potato mixture.
Replace the tops and serve immediately.
Makes 12 sweet potato puffs.
