Carrot Ring - cooking recipe

Ingredients
    2 c. finely grated carrots
    2 1/2 c. sifted flour
    2 tsp. baking powder
    2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. salt
    2 c. margarine
    2 eggs
    2 c. firmly packed brown sugar
    2 Tbsp. lemon juice
    2 Tbsp. water
Preparation
    In a large mixer bowl, mix margarine until soft (do not overbeat).
    Add brown sugar and blend.
    Add eggs, then carrots. Beat in flour that has been sifted with salt, baking powder, baking soda and cinnamon.
    Add lemon juice and water; don't overbeat.
    Bake in a 9 x 13-inch pan or Bundt pan for 1 hour.
    Pan should be well-greased and floured.
