Tofu And Corn Stir-Fry - cooking recipe

Ingredients
    1 large red or green bell pepper, cored and seeded
    1 bunch green onions
    3 oz. button mushrooms
    8 oz. tofu
    3 Tbsp. corn oil
    16 dwarf (baby) ears corn
    4 oz. snow peas, trimmed
    1 garlic clove, crushed
    2 tsp. light soy sauce
    1 tsp. dry sherry
    1 (1/2-inch) piece ginger root, peeled and cut in thin slivers
    1 tsp. sugar
    1/4 c. pine nuts, toasted (if desired)
Preparation
    Cut bell pepper in thin slivers.
    Cut green onions diagonally. Slice mushrooms.
    Drain and cut tofu in cubes.
    In wok or large skillet, heat oil.
    Add corn and bell pepper; stir-fry 4 minutes. Add snow peas, green onions, mushrooms, tofu and garlic and stir-fry 4 to 5 minutes.
