Zucchini Casserole - cooking recipe

Ingredients
    2 spears celery, sliced
    2 carrots, diced
    2 Tbsp. diced onion
    1/2 stick butter
    1/2 c. chicken or veggie broth
    1 pkg. Stove Top cornbread or herb stuffing mix
    6 medium zucchini, sliced
    1 can cream of mushroom or chicken soup
    1 (8 oz.) container sour cream or plain yogurt
Preparation
    Saute celery, carrots and diced onion in butter and enough stock so that vegetables do not stick or burn.
    Add Stove Top stuffing mix.
    Stir until makes crumbly mixture.
    Set aside.
