Spicy Lasagna Roll-Ups - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1 large onion, chopped fine
    1 tsp. dry basil, crumbled
    1 bay leaf, crumbled
    2 cloves garlic, minced
    3/4 tsp. pepper
    1/2 boned chicken breast, chopped fine
    1 can tomatoes, chopped with juice
    2 Tbsp. tomato paste
    8 lasagna noodles
    1/2 c. Parmesan cheese, grated
    1 c. part-skim Ricotta cheese
    1/2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
    1/4 tsp. ground nutmeg or mace
    1/4 tsp. cream of tartar
Preparation
    Heat oil in skillet. Add onion, basil, bay leaf, 1/2 of garlic and pepper. Cook uncovered until onion is soft, about 5 minutes. Remove 2 tablespoons of mixture and set aside. Add chopped chicken. Stir for 3 minutes. Reduce heat. Add tomatoes and tomato paste. Cook uncovered 20 minutes. Stir occasionally.
    Set aside.
