Fluffy Banana Cake - cooking recipe

Ingredients
    2 large or 3 small bananas, broken into chunks
    2 c. sifted all-purpose flour
    2 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1/2 c. shortening, softened (room temperature)
    1 1/2 c. sugar
    2 eggs, unbeaten
    1 tsp. vanilla
    1/4 c. buttermilk
Preparation
    Sift together flour, baking powder, baking soda and salt.
    Put in large bowl the shortening, sugar, eggs and vanilla.
    Beat 1 1/2 minutes.
    Stop and add buttermilk.
    Add sifted flour mixture alternately with mashed banana.
    Beat only enough to blend, about 2 minutes.
    Pour batter into 9-inch greased cake pan.
    Bake at 350\u00b0 for 30 or 35 minutes.
    Cool and top with Cool Whip.
