Zucchini Acapulco(Microwave) - cooking recipe

4 medium size zucchini (about 1 lb.)
1 (3 oz.) pkg. cream cheese
2 Tbsp. minced onion
1/2 tsp. salt
1/4 tsp. pepper
paprika
Preparation

Pierce skin and place whole zucchini in 1 1/2-quart casserole dish.
Cook, covered with wax paper, for 4 1/2 to 5 minutes on High.
Rest for 5 minutes.
Soften cream cheese in dish on 30% for 1 1/2 minutes.
Add onion, salt and pepper.
Cut zucchini in half lengthwise and scoop out seeds and add to cream cheese mixture. Place this mixture back into the zucchini halves.
Sprinkle with paprika and microwave 1 1/2 to 2 minutes on 60%, just until heated through.
