Cajun Bean Soup - cooking recipe

Ingredients
    1 1/2 c. Cajun bean mix
    1 ham bone
    1 lb. diced ham
    1 can tomatoes
    2 large onions, chopped
    2 or 3 cloves garlic, crushed
    juice of 1 lemon
    1 or 2 bell peppers
    3 stalks celery, chopped
    salt and pepper to taste
Preparation
    Wash and soak beans for several hours.
    Drain and place in 3-quart pot.
    Cover with 2-quarts of water.
    Add ham bone, 1/2 of the onions, celery and bell pepper.
    Bring to a boil and simmer for 1 hour.
    Add rest of ingredients and cook until soft.
    Freezes well.
    Serves 4 to 6.
