Beef And Fresh Broccoli Soup - cooking recipe

Ingredients
    2 lb. boneless beef round, cut into 1/2-inch cubes
    2 large leeks, sliced
    3 cans beef broth
    3 bay leaves
    2 tsp. thyme
    1/2 tsp. pepper
    2 c. water
    1 lb. fresh mushrooms, sliced
    2 lb. broccoli, cut into flowerets
    2 yellow summer squash, sliced
    1/4 c. Parmesan cheese
Preparation
    Combine first 6 ingredients in a saucepan.
    Bring to a boil; reduce heat.
    Simmer, covered, for 1 hour or until beef is tender. Remove bay leaves.
    Add water and mushrooms.
    Simmer for 5 minutes.
    Add broccoli.
    Simmer for 4 minutes.
    Add squash. Simmer 3 minutes.
    Serve with Parmesan cheese.
    Yield:
    6 to 8 servings.
