Mexican Corn Bread - cooking recipe
Ingredients

2 c. corn meal mix
1 scant tsp. baking powder
1/4 tsp. soda
3/4 c. buttermilk
3/4 c. sour cream
2 eggs
2 Tbsp. oil
1 small can whole kernel corn
1 small can chopped green chilies
1/2 c. chopped onion
1/2 to 3/4 c. grated Cheddar cheese
Preparation

Mix dry ingredients.
Add butter, milk, sour cream, eggs and oil.
Add whole kernel corn, green chilies, onion and Cheddar cheese and enough oil to cover bottom of skillet or pan.
(I use cast-iron skillet.)
If batter is too thick, add more milk.
Bake at 375\u00b0 to 400\u00b0 until brown, as desired.
