Ingredients

1/4 stick pepperoni, sliced
3 eggs
1 large boiled potato (leftovers are great)
3 green onions with blades, chopped
2 small hot cherry peppers, chopped
1/4 c. grated mild Cheddar or American cheese
2 oz. milk
shortening
salt
pepper
Preparation

Start browning pepperoni in a cold skillet over low heat (let the meat juices come out).
Add shortening to the meat juices to cover the skillet bottom evenly.
Turn to medium heat.
Add potatoes (cubed) and allow to brown to taste.
