Eggplant Casserole - cooking recipe
Ingredients

1 large or 2 small eggplant
1/2 tsp. salt
1/2 tsp. pepper
1 c. tomatoes
1/2 chopped onion
1 small jar pimientos, drained
1/2 c. bell pepper
2 c. corn bread crumbs
Preparation

Cook the eggplant until tender and drain.
Add the salt and pepper.
Mash. Mix together the remaining ingredients.
Add to the eggplant. Grease casserole dish with butter.
Pour mixture into dish. Add enough sweet milk to cover.
Cook at 375\u00b0 until milk is absorbed, about 1/2 hour. Cover with grated cheese.
Let cheese melt in oven.
