Ingredients

4 eggs, beaten
1 3/4 cups sugar
1/2 cup buttermilk baking mix
1/4 cup melted margarine
1 teaspoon vanilla
2 cups milk
1-7 oz. can coconut
Preparation

Beat eggs and sugar in bowl until light and fluffy.
Add baking mix, margarine, vanilla and milk; mix well.
Stir in coconut.
Pour into two 9-inch pie plates.
Bake at 325 degrees until brown.
This pie makes it own crust.
