Peppy Pinto Beans - cooking recipe

Ingredients
    1 lb. dried pinto beans
    4 1/2 c. water
    1 (4 oz.) can chopped green chilies, drained
    2 cloves garlic, minced
    2 tsp. chili powder
    1 tsp. salt
    1 1/2 c. (6 oz.) shredded Monterey Jack cheese with or without jalapeno
Preparation
    Sort and wash beans; place in large Dutch oven.
    Cover with water, 2-inches above beans.
    Let soak 8 hours.
    Drain beans and return to Dutch oven.
    Add water, chilies, garlic, chili powder and salt to beans.
    Bring to boil, cover, reduce heat and simmer 2 hours or until beans are tender, stirring occasionally.
    Transfer to serving dish and sprinkle with cheese.
