Wild Rice Casserole A La Peggy - cooking recipe

Ingredients
    2 c. wild rice
    1 c. chopped celery
    1 c. chopped onions
    1/2 c. chopped green pepper
    1/2 c. chopped fresh mushrooms
    Parsley Patch (by Schilling, salt free)
    toasted almonds (optional)
    salt and pepper (optional)
Preparation
    Soak wild rice in warm water for 2 hours, rinsing water several times.
    Drain.
    In a pot, have 3 quarts of water boiling (part of liquid could be chicken stock); add rice.
    Bring to boil. Turn off heat and let it stand, covered, 15 minutes.
    Drain.
