Microwave Stuffed Manicotti - cooking recipe
Ingredients

1 1/2 to 2 lb. lean ground beef
1 onion, chopped
1 clove garlic, diced
1/2 tsp. dill
1/2 tsp. parsley
3 c. Ricotta cheese
1/2 c. Parmesan cheese, grated
2 eggs
1 pkg. chopped spinach
1 qt. spaghetti sauce
2 c. Mozzarella cheese
1 (5 oz.) manicotti noodles, cooked
Preparation

Microwave on High for 6 to 8 minutes the beef, onion and garlic.
Stir 1 time.
Drain and set aside.
Microwave on High for 6 minutes the spinach.
Drain well.
Combine beef, spinach, dill, parsley, eggs and cheeses.
Stuff shells.
Spread on bottom of 12 x 8-inch casserole with 1 cup sauce.
Arrange stuffed noodles in dish.
Sprinkle with Mozzarella cheese.
Pour remaining sauce. Cover with wax paper and microwave on High for 12 to 15 minutes. Cool 10 minutes.
