Tuna Muffins - cooking recipe

Ingredients
    2 c. cooked brown rice
    3 Tbsp. grated Parmesan cheese
    1 (7 oz.) can chunk white tuna (in water), drained and flaked
    1/2 chopped celery
    1/4 tsp. pepper
    5 Tbsp. low-fat yogurt
    1 Tbsp. chopped parsley
    2 tsp. tamari
    1 Tbsp. lemon juice
    1 tsp. grain mustard
    3 egg whites
Preparation
    Preheat oven to 375\u00b0.
    Combine all ingredients except egg whites.
    In a medium bowl, beat egg whites until stiff peaks form. Fold into tuna mixture.
    Coat six muffin pans with oil or paper cups.
    Fill with tuna mixture, mounding tops.
    Bake 40 to 45 minutes or until golden brown on top.
    Run knife around to loosen.
