Eggplant Casserole - cooking recipe

Ingredients
    1 or 2 eggplant
    1 c. soda cracker crumbs
    1/2 c. milk
    1 egg, beaten
    1/2 tsp. salt
    1/4 tsp. pepper
    1 medium onion, chopped
    2 Tbsp. melted oleo
    1 can creamed soup (any type)
Preparation
    Peel and cube eggplant; cook in salted water until tender. Drain and add remaining ingredients.
    Place in greased casserole and may top with shredded cheese.
    Bake at 350\u00b0 approximately 30 minutes.
