Spicy Zucchini Bread - cooking recipe

shortening
flour
3 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped pecans
3/4 c. vegetable oil
3 eggs
2 c. sugar
2 tsp. vanilla
3 c. unpeeled shredded zucchini
Preparation

Preheat oven to 350\u00b0.
Grease and flour 2 loaf pans with shortening and flour.
In a large bowl, mix next 6 ingredients. Stir until blended; make a well in center of mixture.
In a separate medium bowl, combine oil, eggs, sugar and vanilla.
Mix well.
Stir shredded zucchini into moist batter.
Pour batter into well of dry ingredients and stir until moistened.
Spoon mixture into 2 prepared pans for 10 minutes.
Then remove from pans and serve.
Yields 2 loaves (16 servings each loaf).
Each serving contains 171 calories (43% from fat).
