Harvard Beets - cooking recipe

Ingredients
    5 fresh, medium beets (about 1 1/4 lb.)
    1 Tbsp. cornstarch
    1 Tbsp. sugar
    3/4 tsp. salt
    dash of pepper
    2/3 c. water
    1/4 c. vinegar
Preparation
    Prepare and cook beets.
    Cut into slices.
    Mix cornstarch, sugar, salt and pepper in saucepan.
    Gradually stir in water and vinegar.
    Cook, stirring constantly, until mixture thickens and boils.
    Boil and stir 1 minute.
    Stir in beets; heat through. Makes 4 servings.
