Potato Soup - cooking recipe
Ingredients

1 large onion, chopped
1/4 large green pepper, chopped
4 Tbsp. margarine
3 medium carrots, sliced
4 to 6 potatoes, sliced
1 c. green beans, regular or French-cut (may use frozen)
2 c. milk
7 slices Velveeta cheese
2 tsp. salt
3 c. water
Preparation

Saute onion and green pepper gently in margarine.
Add carrots, salt and water to cover (2 cups water).
Simmer gently.
Add potatoes and simmer gently.
Add green beans, continue to simmer. When vegetables are tender, add milk and cheese, but under no circumstances allow soup to boil after adding milk and cheese. Serve when cheese is melted.
Keep enough water on vegetables while cooking to just barely keep them covered.
(I add the third cup of water with the green beans.)
