Ingredients

3/4 c. butter or margarine, softened
3/4 c. sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. peppermint extract
2 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. baking powder
1/3 c. flaked coconut
1 tsp. red food coloring
Preparation

Cream butter and sugar; beat in egg, vanilla and extract. Stir flour with salt and baking powder; stir into creamed mixture. Divide dough in half.
Stir coconut into one half; blend food coloring into remaining dough.
Cover; chill dough for 30 minutes.
