"Good Luck" Bean Soup - cooking recipe

Ingredients
    2 c. dried beans (the more varieties, the better; kidney, Great Northern, split pea, black-eyed, pinto, lima, etc.)
    2 Tbsp. salt
    water (amount desired)
    ham, ham bone, ham hocks, sausage or turkey sausage
    1 large onion, chopped
    1 (28 oz.) can crushed tomatoes or whole tomatoes, chopped
    1 tsp. chili powder
    2 Tbsp. lemon juice
    salt and pepper to taste
Preparation
    Wash beans thoroughly.
    Place in kettle.
    Cover with water. Add 2 teaspoons salt.
    Soak overnight.
    Then drain off soaking water.
    Add to the beans 2 quarts water, ham, ham bone, ham hocks, sausage or turkey sausage.
    Bring to a boil.
    Simmer slowly for 3 hours.
    Then add all other ingredients.
    Simmer another 45 minutes.
    This soup improves upon standing.
