Ingredients

3/4 C (18 cookies) vanilla wafer crumbs, OR graham cracker crumbs (12 sqs)
3 eggs, separated
1 Tbsp grated lemon peel
1/4 C lemon juice
1/4 C sugar
1/8 tsp salt
Another 1/4 C sugar
1 C whipped cream or 2 C frozen whipped topping, thawed
Preparation

Line ice cube tray, 9x5 inch loaf pan or 8 inch sq pan with half the crumbs.
In medium saucepan, combine the egg yolks (reserve whites in small mixer bowl), lemon peel, lemon juice, 1/4 C sugar and the salt.
Mix thoroughly.
Cook over medium heat, stirring constantly, till mixture just bubbles.
Cool.
