Gnocci - cooking recipe

Ingredients
    4 large potatoes
    1 egg yolk, beaten
    1 tsp. salt
    1/2 c. sifted flour
    butter
    Parmesan cheese
Preparation
    Clean and peel potatoes.
    Boil until soft.
    Mash.
    To the warm mashed potato, add egg, salt and enough of the flour to make dough.
    Knead dough until smooth.
    Roll into pieces 3/4-inch thick and 1 1/2 inches long.
    Drop into boiling water and boil until dumpling rises to the top.
    Drain.
    Serve with butter and Parmesan cheese.
