Mushrooms A La Pancetta - cooking recipe
Ingredients

2 1/2 lb. fresh mushrooms
4 oz. Pancetta or bacon
3 1/2 Tbsp. shortening
1/2 tsp. pepper
1 clove garlic
2 Tbsp. parsley, chopped
Preparation

Trim the stems of the mushrooms and wipe them to remove sand, but avoid washing them, if possible.
Cut the largest ones in half.
Chop the bacon or Pancetta into small pieces.
Melt the shortening in a skillet and add the chopped bacon.
Saute the bacon and sprinkle with pepper.
Add the mushrooms and cook them over a low heat for 1 1/2 hours or until the liquid has evaporated.
Add the garlic and parsley and cook for another 5 minutes.
