Banana Nut Cake - cooking recipe

2 c. all-purpose flour
1 1/4 tsp. baking soda
3/4 tsp. baking powder
2/3 c. buttermilk
1 1/4 c. mashed ripe bananas (about 3 medium)
1/2 tsp. salt
1 1/2 c. sugar
2/3 c. shortening
3 eggs
2/3 c. finely chopped nuts (optional)
Preparation

Mix all ingredients on low until just mixed, then beat on medium speed for 3 minutes.
Bake in 325\u00b0 to 350\u00b0 oven
in 13 x 9-inch pan for 35 to 45 minutes; 24 to 30 muffins for 25 to 30 minutes (done when toothpick comes out clean).
Best if stored overnight before serving.
Makes 24 muffins or 1 (13 x 9-inch) cake.
