Bacon-Corn Bread - cooking recipe
Ingredients

6 slices bacon
1 1/4 c. flour *
1 c. cornmeal
2 Tbsp. sugar
3 tsp. baking powder
1 tsp. salt
1 1/2 c. milk
1/3 c. vegetable oil or shortening, melted
1 egg, beaten
Preparation

Heat oven to 425\u00b0.
Cook bacon until crisp; drain and crumble. Spoon 2 tablespoons bacon fat into round pan, 9 x 1 1/2-inches. Sprinkle with bacon.
Mix flour, cornmeal, sugar, baking powder and salt.
Mix in remaining ingredients thoroughly.
Carefully pour batter over bacon.
Bake 25 to 30 minutes or until golden brown and cracks feel dry.
Immediately invert onto heatproof serving plate.
Makes 8 to 10 servings.
