Chicken Strata - cooking recipe
Ingredients

8 slices day old bread (good quality bread makes the best strata)
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. mayonnaise
healthy dash of pepper
1 1/2 c. milk
generous 1/2 c. Cheddar or Colby cheese, grated
2 c. diced chicken or turkey
1/2 c. finely chopped celery
3/4 tsp. salt
2 eggs, slightly beaten
1 can cream of mushroom soup
Preparation

Cube six slices of bread.
Place half in bottom of an 8 x 8-inch baking dish.
(I usually spray with Pam first.) Combine chicken, vegetables, mayonnaise and seasonings.
Spoon over bread cubes.
Sprinkle remaining bread cubes over mixture.
Combine eggs and milk; pour over all.
Cover and chill overnight.
Spoon soup over strata.
Butter remaining two slices of bread and cube. Sprinkle cheese over the top during the last few minutes.
Serves 6.
May be doubled and made in a 9 x 13-inch pan.
