Black Bread - cooking recipe
Ingredients

4 c rye flour
4 c all-purpose white flour
1/2 c unsweetened cocoa
2 Tbsp caraway seeds
2 tsp salt
2 tsp instant coffee
3/4 c honey
1/2 c each vinegar and butter
Preparation

Combine flours in a large bowl. Set aside three cups. Sprinkle yeast over 1/2 c warm water.
Stir until softened, set aside.
In large mixing bowl
stir together reserved 3 c flour mixture, cocoa, caraway seeds, salt and instant coffee.
Heat in a saucepan, 2 c water, honey, vinegar and butter until just warm. Butter does not need to be completely melted.
Blend well with cocoa mixture.
Add yeast, stir until thoroughly mixed.
Stir in enough additional flour, 1 c at a time until dough no longer clings to sides of bowl.
