Chicken And Vegetable Skillet - cooking recipe

Ingredients
    2 Tbsp. oil
    2 1/2 to 3 lb. chicken, cut into serving pieces
    1 (10 oz.) pkg. frozen peas and carrots
    1 envelope Lipton golden mushroom soup mix
    1/4 c. finely chopped parsley
    1 c. water
Preparation
    In a large skillet, heat oil and brown chicken; drain.
    Add peas and carrots, Lipton soup mix and parsley; blend with water. Simmer, covered, for 45 minutes or until chicken is tender.
    Serve with hot mashed potatoes, if desired.
