Honey Peach Butter - cooking recipe

Ingredients
    10 lb. peaches, peeled and chopped
    1/2 c. water
    4 1/4 c. sugar
    1 1/2 c. honey
Preparation
    In a large kettle, cook the peaches in water until soft.
    Press through a sieve or food mill.
    Measure 12 cups pulp; return to the kettle.
    Add sugar and honey.
    Cook, stirring often, until mixture thickens, about 1 1/4 hours.
    Stir more frequently as it thickens to prevent sticking.
    Pour hot into hot jars, leaving 1/4 inch headspace.
    Adjust caps.
    Process for 10 minutes in a boiling water bath.
    Yield:
    6 pints.
