Pear Honey - cooking recipe

Ingredients
    4 c. peeled crushed pears
    3 c. sugar
    1/4 tsp. salt
    1 lemon, ground
    1/4 tsp. ginger or 1/4 tsp. cinnamon
Preparation
    Combine all ingredients and cook in kettle, stirring occasionally about 15 minutes or until spreading consistency.
    Pour into sterilized 1/2 pint jars within 1/2-inch of top.
    Prepare lids by following directions on box.
    Screw band down firmly tight and process in boiling waterbath 5 minutes.
    Yield:
    5 half pints.
