No-Weep Perfect Meringue(For Cream Pies) - cooking recipe

3 egg whites (room temperature)
1/8 tsp. cream of tartar
6 Tbsp. white sugar
1 Tbsp. cornstarch
few grains of salt
1/2 c. water
Preparation

Put egg whites and cream of tartar in small size mixer bowl. Combine white sugar, cornstarch and salt; mix well.
Add water and put in microwave bowl.
Microwave on High until mixture becomes clear, then add enough mini marshmallows just to cover the mix. Cook just long enough to let the marshmallows puff up; remove and stir the mixture well.
It will be hot.
Beat egg whites until very foamy, not dry, and add the cooked mixture, 1 tablespoon at a time, beating on high power.
Add 1/2 teaspoon vanilla last.
Beat 2 minutes longer.
Spread over pie filling and brown at 400\u00b0 for 5 to 6 minutes or until it browns sufficiently to your liking.
