Crawfish In Puff Pastry - cooking recipe

Ingredients
    2 lb. crayfish
    2 medium onions, chopped
    2 lb. crawfish (with fat)
    5 ribs celery
    1/2 bell pepper
    2 sticks butter
    1/4 c. flour
Preparation
    Melt butter and saute vegetables until tender.
    Wash crayfish and keep stock.
    Season crayfish with red, white and black peppers. Add flour and cook five minutes.
    Add stock and cool twenty minutes.
    Add crawfish and cook 10 minutes.
    Season and add parsley and green onions.
    Cool before filling puff pastry.
