Carrot Muffins - cooking recipe
Ingredients

1 3/4 c. flour
1/3 c. brown sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/2 c. shredded carrot
3/4 c. orange juice
2 Tbsp. oil
1 1/2 tsp. grated orange rind
1 tsp. vanilla
2 egg whites
1/3 c. raisins
Preparation

Combine first 6 ingredients.
Mix well.
Mix in a small bowl next 6 ingredients.
Stir with wire whip.
Add to dry ingredients. Mix slightly.
Add raisins.
Bake in a 375\u00b0 oven for 20 minutes. Makes 12 muffins.
