Hot French Baked Potatoes - cooking recipe
Ingredients

about 12 small new potatoes or red potatoes
1 Tbsp. vegetable oil
1/2 c. olive or vegetable oil
6 Tbsp. red wine vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. chopped parsley
1/4 c. finely sliced green onions
Preparation

Rub each potato thoroughly with the 1 tablespoon oil.
Bake until done.
While potatoes cook, whisk remaining ingredients in small bowl until well blended.
Arrange cooked potatoes on platter or plate with rim.
Potatoes must touch bottom.
Make single layer only.
Open each potato by plunging a fork in and twisting.
Pour dressing over all and serve.
Makes 6 servings.
