Hot Pepper Relish - cooking recipe

Ingredients
    7 c. hot banana peppers
    2 c. sweet red peppers
    3 or 4 large onions
    4 c. sugar
    1 qt. white vinegar
    2 Tbsp. salt
Preparation
    Wash and cut stems out of peppers, discarding any dark seeds. Finely chop peppers and onions.
    Add salt and mix well.
    Let stand about 3 1/2 hours.
    Add sugar and vinegar.
    Bring to boiling, stirring frequently.
    Simmer 15 to 20 minutes.
    Put boiling hot into hot sterilized jars, leaving 1/4-inch headspace.
    Process half pints and pints 15 minutes in boiling water bath.
    If you choose not to process, leave 1/8-inch headspace, place hot lids on and let jars cool overnight.
    Store in refrigerator.
    Relish will have a well blended flavor, if you let it stand 4 to 6 weeks.
